Sweet Potato and Sausage Soup

My Sweet Potato and Sausage Soup is a delicious twist on the flavors in zuppa toscana. Tender potatoes and savory sausage cooked in a creamy and zesty broth. Ready in 30 minutes!

My family love soup and it is a staple for dinner in our house any time of year.

I love the flavors of zuppa toscana and I wanted to adapt the recipe with some of my favorite ingredients. Sweet Potato and Sausage Soup is absolutely delicious and so quick to put together for a weeknight meal.

I use sweet potatoes in place of a traditional russet potato and spinach in place of kale. I also add a little crushed red pepper for some additional spice in the broth. The result is a savory, creamy, and delicious broth with a touch of heat. The sweet potatoes give a touch of sweetness and is a delicious contrast to the savory Italian sausage.

Ingredients

  •  olive oil
  • mild Italian sausage – I use a pork based sausage, but a turkey sausage would also be delicious in this recipe.
  • white onion– yellow or red onion are fine to use as well.
  • garlic
  • chicken broth – low sodium or even a vegetable broth taste great too!
  • sweet potatoes
  • heavy cream
  • fresh spinach – you can use frozen chopped spinach, but make sure it is thawed and drained before adding it or the Sweet Potato and Sausage Soup will have a light green hew to the broth.
  • crushed red pepper flakes – these are optional
  •  black pepper
  • salt – I like to add this at the end because the amount can vary depending on the type of sausage being used for the recipe.

Instructions

  1. In a soup pot, add the olive oil, ground sausage, and onion. Cook over medium heat till the sausage is no longer pink and onion softens.
  2. Add garlic and stir.
  3. Add potatoes and broth. Simmer soup over medium heat until potatoes are fork tender, about 8-10 minutes.
  4. Add the cream, spinach, pepper, and red pepper flakes. Stir. Allow soup to continue simmering till the spinach is wilted and reduced in size. Season with salt if desired. Serve.

Sweet Potato and Sausage Soup

  • 1 tablespoon olive oil
  • 1 lb mild Italian sausage
  • ½ small white onion, diced
  • 2 cloved garlic, minced
  • 6 cups chicken broth
  • 2 cups peeled chopped sweet potatoes
  • 1 cup heavy cream
  • 3 cup fresh spinach
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper
  • salt, to taste

Instructions
